Ingredients for Easy Cheese Scalloped Potatoes:

The ingredients in Easy Cheese Scalloped Potatoes are very simple and traditional.

  • Potatoes – Yellow, Yukon, or Russet potatoes are best for this dish.
  • Butter, flour, and milk or cream – For the roux, these ingredients make the base of a creamy sauce.
  • Salt and Pepper – are essential to flavor this dish.
  • Gruyere and Swiss Cheese – I like a flavorful and nutty cheese because it gives this dish a lot of rich flavors. You can always use any cheese that you like.
  • Better Than Bouillon- Roasted Garlic Base
  • Bread Crumbs- plain
  • Onion- yellow, chopped
  • Chicken or Vegetable Stock
  • Water

CAN I MAKE THESE POTATOES AHEAD OF TIME?

Absolutely! I love recipes that you can prepare ahead of time! Make this casserole two days ahead and then bake the day of. Or, if you want to partially bake these a day ahead of time to save time the day of you can. Just bake for 30 minutes, let cool, cover, and refrigerate. On the day of serving, remove from fridge and let sit on the counter for 30 minutes before baking. Bake for 30-40 minutes uncovered until heated through. Add more grated cheese on top and drizzle with a little cream.

HOW TO MAKE CHEESY SCALLOPED POTATOES?

  1. Preheat oven to 400F.
  2. Grease a 12×9 inch baking dish and set aside. A rectangular baking dish could be used.
  3. In a medium skillet melt butter over medium heat. Add chopped onions and cook for 3-4 minutes, stirring frequently. Be careful not to burn. 
  4. Boil 1 cup of water, add 1 teaspoon Better Than Bouillon Roasted Garlic to the water and stir until blended.
  5. In a small bowl mix together all-purpose flour and 2-3 tbsp of the Better Than Bouillon mixture. Add the mixture to the cooked onions. Cook for 1-2 minutes, stirring frequently. Add chicken or vegetable stock, milk, salt, pepper. Bring to a boil and cook for 2 more minutes, or until it thickens a little, stirring frequently. Remove from heat.
  6. Arrange 1/2 of the potatoes covering the bottom of the baking dish. Pour 1/2 of the sauce over them. Sprinkle 1/2 cup of Gruyere cheese. Arrange the remaining potatoes on top. Pour the rest of the sauce. Sprinkle the rest of the cheese.
  7. Cover with aluminum foil. Bake for 30 minutes. Remove the foil and bake for 25-30 minutes until bubbly and the potatoes are cooked through. Garnish with some fresh thyme. Serve.

With the holiday craziness, casseroles like this are my all-time favorite. With minimal cooking involved to prepare the sauce and assemble the dish. All you need to do afterward is bake the potato casserole covered for 30 minutes and then uncovered for 25-30 more minutes. Easy peasy!

Ingredients

  • 2 pounds potatoes — (I used yellow) washed and sliced into 1/8 inch rounds
  • 1 cup grated Gruyere cheese — ( you can also use Swiss)
  • 2 Tablespoons butter
  • 1/2 yellow onion, chopped
  • 1 teaspoon Better Than Bouillion, Roasted Garlic
  • 2 Tablespoons all-purpose flour
  • 1/2 cup chicken or vegetable stock
  • 1 1/4 cups milk or half and half
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
