If your family loves pizza, you’ll want to keep this recipe handy. In fact, this recipe and ingredients are so easy, that even the kids can make these mini pizzas on their own. The base of the pizzas is made with a can of refrigerated biscuits. From there, sauce plus pepperoni and cheese are all you need for the classic pizza toppings.

Ingredients

Refrigerated Biscuits – Use the flakey butter-flavored can. You’ll love the taste and texture when they bake!

Marinara Sauce – Jarred marinara or pizza sauce is perfect. Feel free to use even plain tomato sauce and add your own seasonings.

Shredded Cheese – I like to use a blend of Italian cheeses, but even just shredded mozzarella is great, too.

Pepperoni – I like to use mini pepperoni since these are bite-sized pizzas.

Directions

  1. Preheat the oven to 375 degrees F.
  2. Pop open the can of biscuits and split each in half so you’ll have 16 mini pizzas.
  3. Lay them out on a baking sheet with a Silpat liner for an easy clean-up and so they won’t stick.
  4. Flatten each biscuit just a bit with a spoon before adding the sauce over the dough rounds.
  5. Sprinkle with cheese.
  6. Top with pepperoni.
  7. Bake for 8-10 minutes until golden brown and the cheese is melted.

Topping Ideas

The great thing about these small pizzas is that they allow you to experiment without making an entire pizza pie that may or may not be something you absolutely love. You could even have a pizza-making party with lots of different topping options for everyone to try.

Here are some topping ideas to try on these bite-sized crusts.

  • Meats: Bacon, ground beef, shredded chicken, crumbled sausage, diced ham, pancetta.
  • Vegetables: Mushrooms, bell peppers, any variety of onions, spinach, olives, artichokes, eggplant, sliced tomatoes, roasted red peppers, shaved Brussels sprouts
  • Sauces: Swap out the red tomato-based sauce for pesto, Alfredo, hummus, or no sauce at all, and just a drizzle of olive oil before piling on your toppings.
  • Cheeses: Mozzarella, Goat Cheese, feta, fontina, smoked cheddar, gruyere, parmesan, Pepper Jack,
  • Seasonings: Garlic, dried or fresh herbs like rosemary, basil, oregano

Can I Bake These In A Muffin Tin?

Yes! Just add each halved biscuit to a muffin tin instead of putting them on a baking sheet. Be sure and spray your tin with cooking spray so they’ll pop out easily when done. Add your toppings and bake at 375 degrees F for 8-10 minutes until golden brown and the cheese is melted.

Alternatively, you can make deep dish mini pizzas by not splitting each biscuit and instead, pressing them down into the muffin wells for a thicker crust. You may need to increase baking time to ensure the biscuits are cooked through.

Can I Bake These In An Air Fryer?

Yes! Here’s how:

  1. Preheat the air fryer to 375 degrees F.
  2. Spray your air fryer basket with cooking spray.
  3. Place assembled mini pizzas in the basket. Do not overcrowd the pizzas. You may need to cook them in batches.
  4. Air fry for 5-7 minutes.

How To Store Leftovers

If you have leftover mini pizzas, be sure and let them cool completely before wrapping them in plastic wrap or storing them in a zip lock bag. They will keep in the fridge for up to 3 days. Reheat in the oven or a toaster oven until warmed through. They will not reheat well in a microwave.

Can I Freeze Leftovers?

Yes. Cool baked mini pizzas completely before double wrapping each in plastic wrap for freezer storage. They will keep for up to 2 months. To reheat, unwrap and place frozen mini pizzas on a baking sheet in a 375-degree F oven or toaster oven and bake until heated through and cheese is melted.

  • 1 cup of Marinara Sauce
  • 1 1/2 cups shredded Italian Cheese
  • 2 ounces mini pepperoni
