Ingredients
- Graham Cracker Crust:
- 1 1⁄2 cups graham cracker crumbs
- 1⁄4 cups sugar
- 6 Tablespoons unsalted sweet cream butter, melted
- 9 inch pie pan
- Baking spray
- Pina Colada ingredients:
- 3 cups cool whip, thawed
- 1 - 8 ounces cream cheese, softened
- 1⁄3 cup sugar
- 1 teaspoon rum extract
- 1 - 15 ounces crushed pineapple, drained
- 1 cup sweetened coconut flakes
- Whipped cream topping:
- 1 1⁄2 cups heavy whipping cream
- 3⁄4 cup powdered sugar
- 2 teaspoon pure vanilla extract
- Large piping bag with star tip
- Garnish:
- toasted coconut
- pineapple slices
- Maraschino Cherries
Instructions
- Gather all of the ingredients.
- Preheat oven to 350 degrees.
- For the crust::
- Combine the ingredients in a medium bowl. Spray the pie pan with the baking spray. Press half the graham cracker crust into the pie dish. Press the remaining crust up along the sides.
- Bake in the oven for 10 minutes and allow to cool completely.
- Pina Colada Pie Directions:
- Using a large mixing bowl, beat the cream cheese until smooth. Beat in 1⁄4 of the crushed pineapple, sugar, and rum extract until smooth and combined.
- Mix in the crushed pineapple and sweetened coconut until combined. Fold in the cool whip until combined and smooth. Scoop the mixture into the pie crust and spread evenly.
- Place into the freezer overnight. Remove and place into the refrigerator one hour or two before serving.
- Whipped Cream Directions:
- Using a large bowl, place the bowl into the freezer for 10 minutes. Remove the bowl after 10 minutes and add in the 1 1⁄2 C heavy whipping cream, powdered sugar, and vanilla. Using a hand mixer, beat the ingredients together until stiff peaks form, about 10 minutes. Scoop the whipped cream into the piping bag. Pipe dollops around the edge of the pie.
- Garnish with toasted coconut, pineapple slices and maraschino cherries.
