For The Graham Cracker Crust
Graham Cracker Crumbs – process or blend into fine crumbs
Sugar – use white granulated
Unsalted Butter – melted

For The Filling
Cool Whip – set it out to thaw so you can easily fold it in with the other ingredients
Cream Cheese – set it out to soften so it will mix easily and not clump with the other ingredients.

How To Make This No-Bake Pina Colada Pie

STEP 1: Make the graham cracker crust by combining graham cracker crumbs, sugar, and melted butter and pressing them into a 9-inch pie pan. Bale for 10 minutes at 350 degrees F. Optionally, you can also use a store-bought prepared graham cracker crust.
STEP 2: Make the pie filling by mixing the softened cream cheese, sugar, rum extract, drained crushed pineapple, and shredded coconut. Fold in the thawed cool whip. Pour the combined filling into the crust, cover, and freeze overnight.
STEP 3: Before serving, move the frozen pie to the fridge to thaw just a bit while you make the prepared topping.

Ingredients

  • Graham Cracker Crust:
  • 1 1⁄2 cups graham cracker crumbs
  • 1⁄4 cups sugar
  • 6 Tablespoons unsalted sweet cream butter, melted
  • 9 inch pie pan
  • Baking spray
  • Pina Colada ingredients:
  • 3 cups cool whip, thawed
  • 1 - 8 ounces cream cheese, softened
  • 1⁄3 cup sugar
  • 1 teaspoon rum extract
  • 1 - 15 ounces crushed pineapple, drained
  • 1 cup sweetened coconut flakes
  • Whipped cream topping:
  • 1 1⁄2 cups heavy whipping cream
  • 3⁄4 cup powdered sugar
  • 2 teaspoon pure vanilla extract
  • Large piping bag with star tip
  • Garnish:
  • toasted coconut
  • pineapple slices
  • Maraschino Cherries

Instructions

  1. Gather all of the ingredients.
  2. Preheat oven to 350 degrees.
  3. For the crust::
  4. Combine the ingredients in a medium bowl. Spray the pie pan with the baking spray. Press half the graham cracker crust into the pie dish. Press the remaining crust up along the sides.
  5. Bake in the oven for 10 minutes and allow to cool completely.
  6. Pina Colada Pie Directions:
  7. Using a large mixing bowl, beat the cream cheese until smooth. Beat in 1⁄4 of the crushed pineapple, sugar, and rum extract until smooth and combined. No Bake Pina Colada Pie

  10. Whipped Cream Directions:
  11. Using a large bowl, place the bowl into the freezer for 10 minutes. Remove the bowl after 10 minutes and add in the 1 1⁄2 C heavy whipping cream, powdered sugar, and vanilla. Using a hand mixer, beat the ingredients together until stiff peaks form, about 10 minutes. Scoop the whipped cream into the piping bag. Pipe dollops around the edge of the pie.
