If you love hot and spicy seafood, then this easy sheet pan recipe is for you! Make these awesome shrimp fajitas right at home in your oven in less time than it would take to order pickup or delivery from your favorite Mexican restaurant. Plus, if you make a large batch, you can have enough for leftovers. Oh, and the cleanup is a breeze – just line your sheet pan with foil, parchment paper, or a silicone baking mat and add the ingredients. Win-win!

What type of shrimp should I use?

As the saying goes, fresh is best. Use fresh, uncooked shrimp for this recipe. At your grocery store’s fresh seafood section, look for medium to medium-large shrimp that has been deveined. If the tails are still on, just remove them at home before cooking. Make sure you are not purchasing pre-cooked shrimp.

Can I use frozen shrimp?

Frozen shrimp, even if you thaw it before cooking, won’t have the same texture and taste as fresh shrimp. Fresh shrimp takes just minutes to rinse and pinch off the tails if it’s already been deveined.

What ingredients do I need to make these sheet pan shrimp fajitas?

1 lb medium fresh shrimp, medium-sized, peeled/deveined

1 1⁄2 cup bell peppers in red, green, and yellow

1 lemon, cut into slices

1 medium red or white onion, sliced.

3 tbsp fajita seasoning

1⁄2 cup olive oil

How do I make sheet pan shrimp fajitas?

  1. Go ahead and heat your oven to 450 degrees Fahrenheit.
  2. Grab your sheet pan and line it with foil, parchment paper, or a silicone baking mat.
  3. Slice onion, bell peppers, and lemon and set aside.
  4. Rinse and prepare your shrimp. If you purchased peeled and deveined shrimp, remove the tails if they are still on.
  5. Add the shrimp to a mixing bowl and coat with olive oil and the fajita seasoning.
  6. Spread the shrimp on half of the sheet pan and spread the veggies and lemon on the other half.
  7. Bake for 10-12 minutes.
  8. While the shrimp and veggies are baking, prepare your tortillas and toppings.
  9. When shrimp and veggies are done, serve them on warm tortillas with your choice of toppings.

  • If you’re watching your carb intake and can’t have tortillas, make a large bowl of salad greens and add your shrimp, veggies, and toppings on top. Delicious!

This is really a matter of taste, and if you have family members who like some toppings but not others, make sure you have a range from which to choose. Here are some ideas:

  • sour cream
  • salsa
  • avocado
  • lettuce
  • fresh cilantro
  • lime juice
  • ranch dressing
  • salsa verde
  • pico de gallo

How do I store leftovers?

Leftovers should be stored in a glass container with a tight-fitting lid and refrigerated. They will keep for up to two days. I do not recommend freezing.

Sheet pan shrimp fajitas are a zesty and easy meal to make on busy weeknights. Ready in under 30 minutes, this Mexican-inspired sheet pan seafood recipe is a flavorful and healthy way to enjoy the combo of shrimp, onions, and peppers.

Ingredients

  • 1 pound medium shrimp (peeled/deveined)
  • 1 ½ cups bell peppers (different colors)
  • 1 lemon (cut into slices)
  • 1 medium onion (sliced)
  • 3 tablespoons fajita seasoning
  • ½ cup olive oil

Instructions

  1. Heat oven to 450 degrees Fahrenheit. 
  2. Coat shrimp in olive oil and then season well with fajita seasoning. 
  3. Spread shrimp over the sheet pan and then add the onion, bell peppers, and lemon slices Bake in the oven for 10-12 minutes. 
  4. Serve immediately. (Serve with sour cream, avocado, fresh tortillas, etc.)

How To Make Fajita Seasoning From Scratch


Ingredients:

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon granulated sugar
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt to taste
  • ¼ teaspoon cayenne pepper


Instructions:

  • Add all the ingredients to a small bowl and whisk together.
  • Store in an airtight container.
