My family really enjoyed this rich dessert, they loved it with ice cream and couldn’t stop eating it, they seriously cleaned out the pan. This is the best way to serve dessert to a crowd.

How To Make Pecan Cobbler:

Preheat the oven to 350°F. In a large bowl whisk together the corn syrup, brown sugar, butter, vanilla, eggs, and cinnamon. Stir in the pecans, pour into a 9-inch baking dish with deep sides, set aside.

Next, make the cobbler topping. In a medium-sized bowl whisk together the flour, sugar, baking powder, and salt. Add in the butter and roll the butter between your fingers, working it into the flour mixture.

Keep doing this until the mixture resembles wet sand with some larger butter pieces mixed in, about 5 minutes. Stir in 6 tablespoons of the buttermilk until combined.

Place dollops of the topping all over the pecan mixture. Brush the topping with the remaining buttermilk. Sprinkle the coarse sugar over the whole top.

Bake for 35-45 minutes until the topping is lightly golden brown and the cobbler is bubbling. Let cool slightly before serving.

The cobbler may bubble over slightly while baking, place a baking sheet under the baking dish to catch any drips.

HOW TO STORE A PECAN COBBLER
  • Serve: Pecan Cobbler can be at room temperature for up to 2 hours and is best served warm.
  • Store: Wrap the casserole dish with plastic wrap and refrigerate Pecan Cobbler for up to 4 days. Reheat in the oven at 325 degrees F until warm all the way through.
  • How To Freeze: Cool Pecan Cobbler completely before freezing in an airtight container for up to 2 months. Thaw the cobbler in the refrigerator overnight before reheating in an oven.

Ingredients

  • 1 & ¼ cup light corn syrup
  • 1 & ¼ cup light brown sugar, packed
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 3 large eggs, lightly beaten
  • ½ teaspoon ground cinnamon
  • 2 cups pecans*
  • Cobbler Topping
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • Pinch of kosher salt
  • 3 tablespoons unsalted cold butter, cut into very small pieces
  • 7 tablespoons buttermilk, divided
  • 1 tablespoon coarse sugar

Buttermilk Substitute:

1 cup buttermilk = 1 Tablespoon white vinegar + enough milk to measure 1 cup.
or 1 cup buttermilk = 1 Tablespoon lemon juice + enough milk to measure 1 cup.
