Ingredients
- Topping:
- 1/3 cup butter melted
- 1/2 cup Brown sugar
- 1/3 cup chopped dried apricots

- 1 cup all-purpose flour
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp ground cinnamon

- 1/2 cup Brown sugar
- 1 tbsp Honey
- 2 Eggs
- 1/2 cup Whole milk
- A pinch of salt
Instructions

5) On low speed, beat in one-third of the flour mixture into the wet mix then, add half of the milk, beating well after each addition, just until smooth. Repeat with flour mixture and milk, ending with flour mixture. Scrape the side of the bowl occasionally.
6) Gently pour and spread batter over dried fruit mixture in the pan.
7) Bake for 30 to 35 minutes or until the toothpick inserted in the center comes out clean.
Notes
1) Butter should be at room temperature for cake.
2) You can add 1-2 tbsp of rum/brandy in the cake batter if you like.
3) Dry fruits can be of your choice
