I have a kitchen aide mixer that my husband bought me for Christmas in 1975, it works just as great as it did when it was new! I baked wedding cakes, birthday cakes, cookies, bread, cinnamon rolls etc! However, I’ve lost my recipe book that cam with it! Getting ready to make “Brendas Pumpkin Roll’ recipe in the recipe book that came with it, I’ve turned my house upside down looking for it! I’ve made it every year for Christmas, I hope you can help. Hello Marsha,
I just knew that I would find the recipe that you are looking for in my KitchenAid Recipe Instruction Manual!
Here is the recipe, I took a screenshot, but there isn't a way to send you an attachment, so I typed up the recipe for you! Merry Christmas!
Brenda's Pumpkin Cake Roll
3 eggs 1 cup sugar 2/3 cup pumpkin 3/4 cup all-purpose flour 1 teaspoon baking powder 2 teaspoons cinnamon 1/2 teaspoon nutmeg 1 teaspoon ground ginger
Place eggs in bowl. Attach bowl and flat beater. Turn to Speed 6 and beat for 1 minute. Continuing on speed 6 gradually sprinkle in sugar and beat for 4 minutes. Reduce to stir speed and add pumpkin. Stop and scrape bowl.
Combine flour, baking powder, cinnamon, nutmeg, and ground ginger. Turn to stir speed and gradually add flour mixture to egg mixture, about 1 minute.
Line 9x 13 x 3/4 inch jelly roll pan with waxed paper and grease well. Pour mixture into pan and bake at 375 degrees for 12-13 minutes. Remove from oven and immediately turn onto a towel sprinkled with powdered sugar. Remove waxed paper and roll cake and towel together, cool completely.
CREAM CHEESE FILLING:
1 package 8oz.) Cream cheese, softened 4 teaspoons butter or margarine 1/2 teaspoon vanilla 1 cup powdered sugar
Place all ingredients in bowl. Attach bowl and flat beater. Turn to Speed 4 and beat until thoroughly combined, about 2 minutes.
When cool, unroll cake and spread with CREAM CHEESE FILLING. Reroll and sprinkle with powdered sugar.
YIELD: Nine 1-inch servings
