Soups are the easiest meal you can make, especially when you already have a roasted chicken or turkey. A good homemade Turkey Soup recipe a go-to after holiday meals! Tender chunks of leftover turkey, carrots, onions, celery, and noodles are simmered in delicious homemade turkey stock. Serve it alongside some Parker dinner rolls and transcend into comfort food heaven!
Today I am using leftovers from an 8-pound turkey to make this hearty Turkey Noodle Vegetable Soup. Yes, it is pure comfort food. Get your veggies out and chop them up.
First, saute the onions:
Add the chopped carrots and celery to the onions, stir and saute for another 5 mins.
Add the turkey broth.
Add the turkey, then add the noodles.

Ingredients
- Leftover Roasted Turkey (bones and dark meat)
- onion
- celery stalks
- carrots
- egg noodles
- water
- olive oil
- salt and pepper

TURKEY NOODLE VEGETABLE SOUP
Delicious and tender chunks of leftover turkey, carrots, onions, celery, and noodles are simmered in delicious homemade turkey stock. It's a wonderful all in one pot comfort meal.
Ingredients
- Leftover Roasted Turkey (bones and dark meat)
- 1 large onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 1/2 bag of egg noodles
- water
- olive oil
- salt and pepper
Instructions
- In a large soup pot, cover turkey bones and meat with water.
- Cover and boil for 1 hour over medium heat.
- The broth should look dark after boiling for 1 hour.
- Remove from heat.
- Chill overnight or let cool.
- Drain liquid into a bowl, remove the turkey from bones.
- Shred turkey, add back to the broth.
- In another pot, add olive oil and chopped vegetables, saute for about 4-5 minutes.
- Add vegetables to turkey and broth, boil until veggies are softer, about 8-10 minutes.
- Add noodles and cook al dente, about 7 minutes.
- Add salt and pepper to taste. Serve hot.
