If you can’t get enough of Girl Scout Thin Mints cookies, you’re going to love this Christmas version. This 4-ingredient no-bake recipe is simple yet delivers on both looks and flavor. Thin chocolate cookies (I use Oreo cookies without the filling) are dipped in melted white chocolate bark infused with peppermint extract. Finish them off with some crushed peppermint pieces on top. It takes just minutes to make these cookies. The hardest part is waiting for the white chocolate to fully cool and set before enjoying these treats.

Ingredients
Bag of Oreo Thins – can also use any other thin chocolate cookie. If you can’t find Thins, use regular Oreo cookies.
Vanilla Almond Bark-once melted, use it to dip cookies.
Peppermint Extract – to flavor the almond bark.
Peppermint Candies – or candy canes (crushed). To be used as a garnish on dipped cookies.

Directions
- Break the bark into pieces and place it in a microwave-safe bowl. Microwave until melted, stirring every 15 seconds. When the almond bark is completely melted, add in the peppermint extract and stir.
- Separate the Oreo thins and gently scrape off the Oreo cream. I used a butter knife to scrape. Prepare a baking sheet or large tray with parchment paper and set aside.
- Dip the cookies one at a time into the melted bark, using a fork; gently flip them over, and scoop the chocolate onto the cookie to give it a solid covering. Make sure you place the cookie top-down, then flip it so the cookie is upright when you lift it out of the chocolate.
- Use the fork to gently lift out the chocolate, and scrape the fork holding the cookie along the edge of the bowl to ensure the bottom is even. Place on the parchment paper-lined tray and sprinkle with crushed peppermint candies, making sure to sprinkle after each cookie is dipped so the candies stick to the chocolate before it dries.
- Let the cookies sit at room temperature for about 30 minutes, or until they harden. Enjoy!
How To Dip The Cookies
Using a fork, dip each cookie into the melted white chocolate until completely coated. Lift, let the excess drip off, and gently scrape the fork along the bowl’s edge to remove any excess. Place it on the parchment paper and immediately sprinkle with crushed peppermint so it sticks to the white chocolate as the chocolate sets and hardens.

Cookie Variations
Here, I’ve used chocolate Oreo thins. You can use any thin chocolate cookie or any cookie flavor. Golden Oreos would work, as well. You could use cracker-based cookies, but make sure they’re sturdy enough to be dipped without crumbling.

Chocolate Variations
I love using white chocolate, especially during the holidays, but you could also use brown chocolate almond bark. If you want to be even more colorful, you could use red or green melting wafers instead of almond bark.

Flavor Variations
Here, I’ve added peppermint extract to the almond bark. You can customize the flavor to any theme. Try other extracts, such as lemon, vanilla, orange, or coconut. Make sure the garnish you use pairs well with the flavor.

Garnish Ideas
Since this recipe is so customizable with any cookie base, chocolate color, and flavor extract, you have many options for garnishes. Sprinkles of any type or color pair with almost any choice you make. Also consider other types of crushed, hard candy as a topping. Finely chopped nuts are an option, as is a drizzle of melted chocolate on top.

Store in an airtight container on the countertop for 5-6 days.
