BEST EVER PECAN PIE BARS

I am sharing one of my fall favorite desserts – Pecan Pie Bars!! Growing up, we had a gigantic Pecan Tree in our backyard. One of my jobs during the holidays was shelling those pecans. Now, for a kid, this was a lot of work, but it was well worth it when I sunk my teeth into that first bite of Best Pecan Pie Bars! Pecans are especially popular this time of year during the holidays but don’t make the mistake of thinking this is only a seasonal recipe. These yummy Pecan Bars are so gooey and addicting, you’ll likely find yourself making this delicious dessert all year round.

If you’re a fan of Pecan Pie, you will absolutely LOVE these bars. With a buttery shortbread crust and caramelized pecan filling, it’s impossible not to like these sweet and nutty bars. I’m thinking we might make these for dessert on Thanksgiving, or even as a homemade neighbor gift during Christmas time.

Let’s make the Pecan Pie Bars Bottom Layer:

  • For the bottom crust you will need:
  • 2 cups flour
  • ⅓ cup of sugar
  • ¼ teaspoon salt
  • ¾ cup cold butter

In a food processor, add the ingredients for the bottom crust. Pulse until blended and the flour resembles coarse sand.

Press crust mixture evenly in the bottom of the bar pan. Bake the crust for 20 minutes.

For the filling you will need to measure out:

  • 4 large eggs
  • 1 ½ cup corn syrup
  • 1 ½ cup sugar
  • 3 tablespoons butter, melted
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups chopped pecans

Meanwhile, whisk together the eggs, corn syrup, sugar, melted butter, and vanilla in a large bowl. Stir in pecans.

When the crust is ready, pour the pecan mixture over the hot crust.

Return the bar pan to the oven and bake for 25 to 30 minutes or until the filling is set.

Cool completely (overnight for best results) before slicing into bars.

Store in an airtight container between layers of parchment paper.

I made your Pecan Pie Bars. I’m no baker here in our house more savory dishes I enjoy. They were so easy and very tasty. Glad I made them and brought them over for Thanksgiving, if I hadn’t I would not have had pecan pie! Side note I might use roasted and salted pecans next time I make this so delicious little bar of goodness.
