Cook’s Notes: Cake will keep airtight at room temperature for up to 5 days or in the freezer for up to 6 months. Don’t store it in the refrigerator because it’ll dry out.

CopyCat Starbucks Mini Lemon Loaves

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Lemony mini cake loaves with a delicious lemon glaze!

Ingredients

  • 3 large eggs
  • 1 cup of sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 1/3 cup lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar (for the glaze)
  • 2 tablespoons half and half
  • 1/2 teaspoon lemon extract

Instructions

  1. Preheat oven to 350 degrees
  2. Spray bottoms only of 4 mini loaf pans with Bakers Joy.
  3. In a KitchenAid or a food processor combine 3 large eggs, 1 cup sugar, 2 tablespoons softened butter, 1 teaspoon vanilla extract, 1 teaspoon lemon extract, and 1/3 cup lemon juice. Blend until well mixed.
  4. Add 1 1/2 cups flour to the ingredients and mix until just combined. Add 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt and mix until just combined. Add 1/2 cup vegetable oil and mix until combined.
  5. Spread into prepared pans.
  6. Bake 30 minutes or until toothpick test is clean
  7. Cool on a wire rack while you make the glaze.
  8. GLAZE
  9. Mix 1 cup powdered sugar with 2 tablespoons half and half and 1/2 teaspoon of lemon extract. Add more sugar if you prefer a thicker, sweeter icing.
  10. Glaze the cake, slice, and enjoy!

Instead of using a food processor. Can this be mixed using a hand mixer? Not everyone has a food processor. Thanks for sharing this recipe. Can't wait to try it.

Taste is very good. My batter only filled three mini pans and when baked not near an overflow.

Hi Carolyn,

Yes, you could, I would double the recipe and bake at a lower temperature, 325 degrees F, and add 10 more minutes to the baking time.

Has anyone found a way to tweak this recipe so that it doesn't sink in the middle?

What does it mean when the center of the cake sinks in the middle? The most common reason why cakes sink in the middle is that they're underbaked. What is this? If a cake isn't fully baked through, the center doesn't have a chance to set and it will sink. This creates a doughy, dense texture in the center of your cake layer. Another reason is, that for recipes like banana bread, lemon loaf, or pound cake, your best bet is to bake in a metal loaf pan. Metal is a quick and efficient conductor of heat. This helps to ensure your recipe will cook through the center and not collapse. Avoid using dark-colored pans as they brown way more quickly and aggressively. Another reason, is if you need to rotate the cake pans during baking then wait until the cakes have baked for around 3/4 of the baking time and are almost fully set. Avoid opening and closing the oven door too sharply and move the pans around gently to minimize the risk of sinking.
