Ingredients Needed

  • Lean ground beef – beef at 85/15 works well for this recipe.
  • Onion – small diced onion adds flavor to the meat.
  • Dill pickles – diced, goes into the meat mixture as well as a final topping for the baked mini loaves.
  • Worcestershire sauce – adds flavor to the meat.
  • Thousand Island Dressing – goes into the meat for flavor as well as a topping for the baked mini loaves.
  • Salt and pepper – seasoning for the meat mixture.
  • Ritz crackers – crushed, goes into the meat mixture to help hold the mixture together.
  • American cheese slices – you’ll need 6 slices to top the baked loaves with for melty goodness.
  • Toppings: shredded lettuce, more dill pickles, diced onions, and more Thousand Island Dressing dressing.

How To Make This Recipe

  1. Preheat the oven to 350° F.
  2. Line a sheet pan with foil and set aside.
  3. In a mixing bowl, add ground beef, onion, pickles, crushed Ritz crackers, Worcestershire sauce, Thousand Island dressing, salt, and black pepper, and mix well, with hands or a large spoon, to combine.
  4. Form the meat into 6 equal mini loaf shapes and set it on the lined sheet pan.
  5. Bake the mini meatloaves for 20-25 minutes, or until the center is no longer pink and the internal temperature reaches 160° F on a meat thermometer.
  6. When done, remove them from the oven and immediately top each with a slice of American cheese and let it melt.
  7. Before serving, drizzle each meatloaf with more Thousand Island dressing.
  8. Optional, but highly recommended: top with shredded lettuce and more diced pickles and onions before serving.

Variations For Cooking

While this recipe is awesome as is, being shaped into mini loaves, you can also use a regular size muffin tin, or even a mini muffin tin when baking the meatloaf mixture. This just gives you different options for how they look and how you might serve them.

For example, mini muffin Big Mac meatloaf balls could be served lined up in a hoagie-style bun (think meatball sandwich) with shredded lettuce, pickles, and lots of that special sauce.

How To Store Leftovers

  • Fridge: Mini meatloaf leftovers can be stored in an airtight container in the fridge for 2-3 days.
  • Freezer: Make sure the meatloaves are completely cool before packaging them for the freezer. Mini meatloaves can be stored in a freezer-safe container or Ziploc bag in the freezer for up to 3 months. Thaw in the fridge overnight before reheating.

How To Reheat Leftovers

  • Microwave: To reheat (thawed) mini meatloaves, you’ll want to make sure they stay moist. For the microwave, place in a microwave-safe container with a little water or beef broth and cover to avoid splatter when heating. Microwave on high for 30 seconds and check to see if the desired temperature has been reached. If not, microwave in 10-15 second increments until the temperature is reached.
  • Oven: To reheat (thawed) mini meatloaves, you’ll want to make sure they stay moist. For the oven, preheat to 250° F, place in a baking dish with a little water or beef broth, and cover with foil. Place the baking dish in the oven for approximately 15 minutes and then check to see if the desired temperature has been reached. If not, leave in an extra 5 minutes and check again.

These Big Mac Mini Meatloaves taste just like your favorite McDonald’s burger. Each delicious mini loaf is full of juicy beef, onions, pickles, and that special sauce that makes them irresistible. They’re topped with shredded lettuce plus more pickles and sauce for a meal that kids, as well as adults, will love.

Ingredients

  • 2 pounds lean ground beef
  • 1 small onion, diced
  • 1/3 cup dill pickles, diced
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Thousand Island Dressing, plus more for topping
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 sleeve of Ritz Crackers, crushed
  • 6 slices American cheese
  • Lettuce, pickles, onions and more dressing for topping

Instructions

  1. In a large bowl, combine the ground beef, onion, pickles, crushed Ritz crackers Worcestershire sauce, Thousand Island dressing, salt and black pepper. 
  2. Mix well until everything is combined.
  3. On a foil lined sheet pan form the meat into 6 equal mini loaf shapes. 
  4. Bake for 40-45 minutes.
  5. As soon as the meatloaves are done remove them from the oven and immediately top with a slice of American cheese to melt.
  6. Right before serving drizzle each meatloaf with more Thousand Island dressing.
  7. Top with more diced pickles and onions if you like and shredded lettuce.
  8. Serve!  

Notes

Store leftovers in the refrigerator for 2-3 days.

I love to serve these with french fries, and sweet potato fries, but this is also great with mashed potatoes.

These are really good over a salad as a delicious low-carb meal choice.

Slice up any leftovers the next day for a genuinely amazing grilled cheese.

You can substitute dried minced onions for the fresh ones. 

You can add a sprinkle of sesame seeds to mimic that classic sesame seed bun.
