Roast beef and gravy is a delightful meal any time of the year and for any occasion. The seasoned beef is highlighted with a delicious mushroom gravy that’s perfect for serving over mashed potatoes or rice.
Best of all, your slow cooker does most of the work! It’s a great recipe because it doesn’t require any special cooking skills. All you need to do is add the meat, open a few cans of soup and broth, dump in a few seasonings, put the lid on, and set your appliance. What could be easier?
Whether you make this for Sunday dinner, a weeknight meal, or make it by special request for someone’s birthday, it’s one of those meals that’s always appreciated. Oh, and it smells amazing as it cooks slowly in your crock pot. It will definitely have the family ready and waiting for this roast beef and gravy meal to be served!
Ingredients Needed
- Beef chuck roast – boneless and cut in half.
- Cream of mushroom soup – two 10-ounce cans. This will help flavor the beef and become gravy.
- Beef broth – this will help flavor the beef as well as the mushroom soup gravy.
- Onion soup mix – an envelope of this seasoning adds savory goodness to the meat and gravy.
- Red wine vinegar – just a dash helps the flavors develop.
How Do I Make This Recipe?
- Prep your slow cooker by inserting a liner or spraying it with nonstick cooking spray.
- Cut the beef roast in half before placing it in the slow cooker.
- Open the cans of cream of mushroom soup and beef broth and add those to the slow cooker along with the packet of onion soup seasoning and red wine vinegar.
- Cover the slow cooker and cook on low for 8 hours or until the beef is fork-tender
Do I Need To Brown The Roast?
For this recipe, you do not need to brown the roast before cooking. I’m always looking to save time and effort, which is why I love this method of slow cooking a roast to tenderness.
That said, if you do want to take the extra step of browning the roast, you certainly can. Browning will help lock in the flavors and make it extra tasty. Just add oil to a skillet and sear each side of the roast before adding it to the slow cooker.
It’s totally up to you, but it’s not required. You’ll still get a flavorful meal by skipping this step!
What’s The Best Roast To Use?
I like to use chuck roast for this recipe. It’s economical and turns out tender and well-seasoned every time. It’s the tougher cuts of meat, like chuck roast, that work the best in slow cooker recipes because the slow cooking actually tenderizes the meat.
You can also use a rump roast or an eye of the round roast.
Substitutions
- Soup: If you don’t like mushrooms, you can substitute the cream of mushroom soup for cream of celery soup. You absolutely need a creamy soup to help create the gravy, so cream of celery is an excellent substitution.
- Beef Broth: You can substitute a dry red wine for the beef broth.
How Do I Thicken The Gravy?
If the gravy isn’t thick enough for you, remove the meat and add a smidge of cornstarch and whisk it into the gravy mixture. Start with a little cornstarch, whisk, and add a little more until your desired consistency is reached.
What To Serve With Roast Beef And Gravy
There are so many delicious side items to serve with slow cooker roast beef and gravy, but the one that most people love is potatoes. I have several delicious ways to prepare potatoes, and of course, mashed potatoes are always a favorite since you’ll want to ladle that mushroom gravy on top!
You might also like my crispy garlic smashed potatoes or even my cheesy scalloped potatoes.
Rice is another starchy veggie that goes perfectly with this meal. Serve it plain and drizzle on gravy or make my cheesy version.
Buttermilk biscuits are also a wonderful way to enjoy all that gravy!
And don’t forget about green beans – they’re always a popular side item. Asparagus is an easy side, too!
How To Store And Reheat Leftovers
Let any leftovers cool completely before storing them in an airtight container. They will keep 3-4 days in the fridge. You can also freeze leftovers in a freezer-safe container for up to 2 months.
Refrigerated leftovers can be reheated in the microwave in 30-second increments or on the stovetop over medium heat, with gravy included. Stir to keep it from sticking or burning. You may need to add a little beef broth or water to the gravy if it’s too thick.
Frozen leftovers should be thawed completely before attempting to reheat. Thaw overnight in the fridge.

- 2 (10 ounce) cans cream of mushroom soup
- ⅓ cup beef broth
- 1 envelope onion soup mix
- 1 tablespoon red wine vinegar
Instructions

- Place the two halves of the beef roast into the bottom of the slow cooker.
- Mix the remaining ingredients together and pour over the roast.
