Ingredients Needed

Golden Oreo Cookies – crushed. These make the no-bake crust and garnish the top of ice cream bars.
Butter – melted. You can use salted or unsalted butter, which will be mixed with the crushed Oreos to form the crust.
Heavy cream is used to make the ice cream base.
Sweetened Condensed Milk – used to sweeten and thicken the ice cream base.
Fresh Strawberries, chopped. These are used in the ice cream filling and as an ice cream bar garnish.

How To Make Oreo Strawberry Ice Cream Bars

These Oreo Strawberry Ice Cream Bars are a great no-bake summer dessert. Golden Oreos make up the crust for a luscious homemade ice cream filling made with heavy whipping cream, sweetened condensed milk, and fresh strawberries. This is a refreshing dessert perfect for summer.

Best of all, no ice cream maker equipment is needed! You only need a handheld (or stand) mixer to blend the ingredients. For this recipe, the strawberry ice cream filling is poured into the baking pan that holds the no-bake Oreo crust, and it’s all frozen together. How easy is that?

What Is No Churn Ice Cream?

No-churn ice cream uses whipped heavy cream and sweetened condensed milk to achieve a thickened texture similar to custard.

Can I Use Frozen Strawberries?

Yes, you can use frozen strawberries. Thaw strawberries if they are frozen. How finely you chop the strawberries (fresh or thawed) is up to you.

You can use a potato masher or even blitz them in your food processor or high-speed blender for a finer consistency. It’s totally up to you!

  • You can swap it out for a chocolate Oreo crust that pairs deliciously with the strawberry ice cream.
  • Swap the strawberries out for fresh blueberries, raspberries, peaches, or cherries.

Add-Ins

Cream Cheese: Make the ice cream taste like cheesecake by adding a few dollops of cream cheese.
Chocolate: Finely chopped chocolate or chocolate shavings can be added to the filling.

Store leftovers in an airtight container in the freezer for up to 2 weeks.

These Oreo Strawberry Ice Cream Bars are such a great no-bake summer dessert. Golden Oreos make up the crust for a luscious homemade ice cream filling made with heavy whipping cream, sweetened condensed milk, and fresh strawberries. This is a perfect refreshing dessert great for summer.

Ingredients

  • 36 golden oreo cookies, divided
  • 6 tablespoons butter, melted
  • 2 cups heavy cream
  • 1/2 cup sweetened condensed milk
  • 1 ½ cups chopped fresh strawberries, divided

Instructions

  2. Line a 9x9 square pan with parchment paper and set aside.
  3. Use a food processor to crush 24 of the golden Oreos finely. Oreo Strawberry Ice cream Bars crushed oreos
  4. In a mixing bowl, combine the crushed Oreos with the melted butter. Oreo Strawberry Ice cream Bars
  5. Add the cookie mixture to the bottom of your prepared pan. 
  6. Spread out and pat down evenly. 
  7. Place the pan into the freezer while you prepare the ice cream. 
  8. Whip the heavy cream in a large mixing bowl using an electric mixer until stiff peaks form.
  9. Add the sweetened condensed milk to the whipped cream until combined.

  13. Freeze for 8 hours or overnight.

  • You can use any flavor of Oreo you like.  Chocolate would be great with the strawberry.
