I love an indulgent slice of pecan pie. However, I don’t always have the time to make the crust and pecan pie filling. I also don’t have the time to wait for it to bake. That’s why this easy fudge recipe is a lifesaver!

What I love about this recipe is its quickness and straightforwardness. You can whip it up with just a few ingredients. It does need some time in the fridge to set, but it’s totally worth the wait. Most of the process can be done in the microwave. You will need to toast the chopped pecans on the stovetop, which only takes a few minutes. Once everything is mixed, refrigerate it for a few hours. Then, you can enjoy this delicious treat. This Pecan Pie Fudge is perfect for holiday gatherings, as a snack, or as a gift for friends and family.

Ingredients

Chopped Pecans – Finely chopped pecans work better than pecan halves. Toast them lightly on the stove for a deeper flavor.
Evaporated Milk – helps to thicken the fudge. Make sure you’re using evaporated milk and not sweetened condensed milk.
Dark Corn Syrup – helps sweeten the fudge and give it a smooth texture. You can also use white corn syrup.
White Chocolate Chips – help sweeten and thicken the fudge.
Vanilla Extract – balances the flavors in the fudge.
Maple Flavoring – enhances the flavor of the fudge and pairs well with the vanilla and pecan flavors.
Powdered Sugar – helps sweeten the fudge.

Directions

  1. Line a 8×8 baking dish with parchment paper and set aside. In a large skillet toast the pecans over a medium to high heat for 5 or less minutes. Once they are done, set aside to cool.
  2. To a large microwave safe bowl add the evaporated milk and corn syrup; stir and then place in the microwave and heat for 3 minutes.
  3. Add the 3 cups of white chocolate chips as soon as it comes out of the microwave; stir until completely melted. Add the vanilla extract, the maple flavoring and powdered sugar; stir until it’s completely combined and thick.
  4. Pour into the lined 8×8 baking dish and sprinkle all the toasted pecans on top. Lightly tap them down so they stick better. Place in the fridge for 2 hours. Lift the parchment paper out of the 8×8 pan and slice the fudge, serve and enjoy!

Is There A Substitution For Corn Syrup?

Corn syrup will provide you with the classic fudge texture. You can certainly try using any of the following as substitutions. Be aware that the texture and taste may vary.

  • brown rice syrup
  • golden syrup
  • maple syrup
  • agave nectar
  • honey

Variations

  • Swap out the chopped pecans for chopped walnuts, almonds or macadamia nuts.
  • Add-in dried fruits such as cranberries, dates, apricots or figs.
  • Give it a boozy kick by adding 1–2 tablespoons of bourbon or rum.
  • Make a chocolate pecan pie fudge by swapping out the white chocolate chips for semisweet, milk chocolate or dark chocolate chips.
  • Drizzle the top of the fudge with salted caramel or chocolate fudge sauce for an additional flavor profile.

How To Use Up Leftover Evaporated Milk

You’ll probably have some leftover evaporated milk from this recipe. Use the leftovers as you would regular milk. Store in the refrigerator until you’re ready to use it. For example, mix it in your coffee. Use it in your morning oatmeal or cereal. Add it to your mashed potatoes. Use it in soups, sauces, or stews.

Storage

Store fudge in an air-tight container in the refrigerator for up to 3 days. You can also freeze the fudge, wrapped tightly and stored in a freezer-safe container for up to two months. Thaw in the fridge or on the countertop.

Tips and tricks!

● Store in an airtight container in the fridge for 2-3 days.

● You can leave the fudge overnight in the fridge before slicing. Just sit it out for 5-10

Minutes before cutting.

● I think a drizzle of caramel on top of these would be delicious.
