Best Chunky Monkey Bars

These bars are full-flavored chewy dense bars. They have a brownie texture but are just as delicious as my homemade banana bread. They can be baked in under 40 minutes and are a wonderful dessert for lunch boxes. This is one of the best ways to use up those ripe bananas sitting on the counter.

Two kinds of chocolate make this best monkey bar extra rich and delectable.

What ingredients do you need for this recipe?

Sugar, butter, eggs, vanilla, bananas, flour, baking soda, salt, chocolate chunks, and chocolate chips.

Another popular way to use those ripe bananas is to make my popular Carrot Banana Bundt Cake.  It’s always a family favorite. Another Chunky Monkey dessert is my Chunky Monkey Pudding Popsicles.

Let’s get started making these bars! Preheat the oven to 350 degrees. Let all of the refrigerated ingredients come to room temperature.

With a hand mixer, cream butter, and sugars. Add the brown sugar first.

Then add the granulated sugar.

Mix well.

Add in the eggs.

Mix the eggs well with the hand mixer.

Add chunks of bananas.

Now, add the flour.

Next add the baking soda.

Add salt.

Mix all of these ingredients well with a hand mixer.

Chocolate chunks are perfect for these Chocolatey Chunky Monkey Bars.

Fold in the chocolate chunks with a spatula.

Prepare a 9×13 pan with non-stick cooking spray and parchment paper. Pour Monkey Bar batter into the pan and spread evenly. Top with chocolate chips.

Bake for 30-35 minutes. Let cool, and cut into squares. Check out how ooey-gooey that chocolate is! Grab a glass of milk and enjoy it!

Helpful Tips for making Best Monkey Bars:

  • Set all ingredients out to come to room temperature.
  • Use a hand mixer or KitchenAid, the batter is thick.
  • These bars will keep in a covered container at room temperature for up to 3 days.

Best way to store Monkey Bars:

After completely cooled off, wrap in plastic and then foil. Store in the refrigerator or freezer. Best Chunky Monkey Bars may be stored in their baking pan tightly covered with aluminum foil if they will be eaten in a few days. They should be removed from the pan and stored in an airtight container. Separate bar cookies with waxed paper between layers.

These are wonderful. I did the bananas in the food processor and then put them in the batter. It was much easier that way.
