Keto Pizza Stuffed Chicken is all of the flavors of pizza and chicken but Low Carb Keto! No breading, no crust, but with all of the flavors of pizza and stuffed chicken without all of the guilt.
This is the perfect Keto dinner for a quick weeknight or weekend meal. It’s really no fuss, no muss kind of meal, the only semi-messy part is pounding the chicken breast flat, but just use parchment paper, super easy. If you are craving pizza and want to stick to your LOW CARB/KETO Diet, then you have hit the jackpot!
Ingredients:
- boneless, skinless chicken breasts
- pepperoni slices
- shredded mozzarella cheese
- pizza or Marinara sauce
- Salt and pepper, to taste
Slice chicken in half through the thickness of the breast horizontally and pound it to 1⁄2 inch thickness. (Avoid all of the mess by just placing chicken breast in between sheets of plastic wrap or waxed paper when pounding with a mallet.)
Sprinkle chicken with salt and pepper. In the middle of the chicken add four slices of pepperoni and about 1 tablespoon of shredded mozzarella.
Almost cover the pepperoni with the shredded mozzarella cheese.
Roll the chicken, keep tucking the edges, and place in the prepared baking dish.
Pour pizza sauce over each chicken breast. Top with remaining mozzarella and pepperoni slices.
Sprinkle with more shredded mozzarella cheese, you want this to be cheesy, right?
Bake in the oven at 375 degrees for about 30-40 minutes. Smells delicious!
How to make Keto Pizza stuffed chicken breast:
First, you’ll want to slice into your chicken using a sharp knife. Place one hand on top of the chicken breast to hold it steady and use the other hand to carefully cut a deep pocket into the side of the chicken. Cut it in half.
I use Rao’s marinara (affiliate link) almost every day. It’s the lowest carb marinara that I have found in the markets. I really think that it is the best sauce. Before I started this Keto journey, I was already using Rao’s, it’s a perk that it is keto-friendly.
