If you’re a fan of garlic, you’ll want to keep this recipe handy because you’ve just found your new favorite way to consume this intensely fragrant and tasty ingredient. This simple and amazingly useful recipe will show you how to make roasted garlic butter.
Raw garlic, as you know, has not only a pungent smell but a very strong flavor. Even when sauteed and incorporated with more dense ingredients, you will always know when garlic is present in a dish!
Here, I’ve taken a head of garlic and roasted it to achieve a more mellow flavor. If you’ve never tasted roasted garlic before or used it in your recipes, this will be a game-changer! Roasted garlic will add a new dimension to your cooking.
It’s so easy! You’ll just roast a head of garlic in the oven and then remove each softened clove to be combined with butter and finely chopped chives. When you infusion butter with other ingredients, herbs, or flavors, the resulting product is known as compound butter.
Once the butter has been transformed with these flavors, you can keep it in the refrigerator, or even freeze it, for use in all sorts of recipes.
Ways to use roasted garlic butter
Ah! This is where you’ll really get to experiment in the kitchen. There are so many ways to use roasted garlic butter. Here’s a short list to get you started. Don’t be afraid to experiment. Once you get started, you’ll always want to keep a batch of this magical butter on hand!
- Smear it on garlic bread (obviously!)
- Use it in or on potatoes (baked, mashed, or roasted)
- Use it on meats – beef, chicken, pork (grilled, baked, stovetop)
- Flavor seafood
- Up-level any vegetable (broccoli, asparagus, carrots)
- Use it as a dip for veggie sticks, bread sticks, crackers, steamed artichokes
- Smear it on corn on the cob
- Slather it on pizza crust before you add toppings
- Add to cooked rice or noodles
How to store roasted garlic butter
Keep your roasted garlic butter stored in an airtight container in the refrigerator for up to a week. If you don’t think you’ll use it all up by then, freeze it. An easy way to do this is to use a silicone ice mold and freeze it in small shapes. Just pop one out when you need to use it. Let it soften a bit if you’re going to use it as a spread or just microwave it for a few seconds to soften it up before attempting to spread it.
How do you roast garlic?
The short answer is you tear off a piece of foil, cut off the very top of the head of garlic (keeping the cloves intact), place it on the foil, exposed clove-side up, drizzle a little olive oil over it, add a dash of salt and pepper, seal the foil up tightly, place on a baking sheet and bake for 45-55 minutes in a 350-degree oven.
How do you remove the garlic cloves?
When you’ve completed roasting the head of garlic, remove it from the oven, open the foil and let the head of garlic cool. This is important because if you try to remove the cloves immediately, you will burn your fingers. Let the garlic cool enough that it’s easy to handle. You’ll be able to easily squeeze each clove out individually with your fingers. Once the cloves have been removed, make sure to let them cool completely before adding them to the food processor with the butter and herbs.
What other herbs can I use?
This recipe calls for finely chopped chives, but feel free to experiment with adding different herbs to the butter along with the roasted garlic. Here are a few to get you started:
- rosemary
- oregano
- basil
- tarragon
- mint
- sage
Ingredients:
- garlic
- olive oil
- unsalted butter softened
- sea salt
- black pepper
- finely chopped chives or herb of your choice
- Preheat the oven to 350 degrees.
- Remove paper-like skin from the outside of the garlic bulb, leaving cloves attached.
- Cut ¼ inch from the top (stem side) of each garlic bulb, exposing the top of the cloves.
- Pour olive oil over the top of the cloves.
- Wrap each garlic head tightly in aluminum foil. Place on a baking sheet.
- Bake for 55 minutes or until the cloves are tender.
- Cool slightly before separating cloves. Squeeze to remove garlic. Allow garlic to cool completely.
- In a food processor, cut together butter, garlic, salt, pepper, and parsley until completely blended.
- Use immediately or refrigerate in an airtight container for one week.
- You can also place it in a silicone mold to refrigerate in shapes. Allow butter to soften before using on bread.
- Butter can be used cold on baked potatoes, steak, etc.

Can I just use garlic cloves that are not in the skins?

Yes you can use them, just not as fresh zippy tasting as fresh cloves.
